05 - 3 cups (700 ml) sparkling water, chilled

# Directions:

01 - Place the cucumber slices, mint leaves, lemon juice, and honey/agave in a blender. Blend until completely smooth.
02 - Strain the mixture through a fine mesh sieve into a pitcher to remove pulp, pressing gently to extract as much liquid as possible.
03 - Add chilled sparkling water to the pitcher and stir gently.
04 - Taste and adjust sweetness or lemon juice if desired.
05 - Fill glasses with ice cubes. Pour the mocktail over ice.
06 - Garnish with lemon slices, cucumber rounds, and mint sprigs if desired. Serve immediately.
