# Expert Tips:

01 -
  • It looks impressive enough to be the main dessert but requires almost no skill, just good timing and an oven.
  • The warm gooey chocolate with crispy-edged marshmallows hits different when you're eating straight from a communal skillet with people you actually like.
  • You can have it ready before your guests even finish their main course, which means more time for eating and less time hiding in the kitchen.
02 -
  • Watch the oven closely during marshmallow toasting because they brown suddenly and unevenly depending on your oven's hot spots, and you want golden, not charred.
  • Cast iron holds heat longer than regular baking sheets, which means the chocolate stays pourable and the marshmallows stay gooey longer even after you pull it from the oven, which is the whole point.
03 -
  • Use oven mitts when handling the cast iron because it stays hotter longer than you expect and a burned hand ruins the whole party vibe.
  • If your marshmallows are browning unevenly, rotate the skillet halfway through cooking, which most ovens need anyway.
